Gourmet RV Meal Prep for Small Spaces

We're obsessed with the art of gourmet RV cooking. Growing up with a chef who cooked for celebrities and politicians, I learned to elevate on-the-road dining using local, seasonal ingredients.

My father raised my siblings and me to be explorers, but I’ve since realized that a love for adventure doesn’t have to include playing "short-order cook" in a cramped RV kitchen. So, here are five of my father's favorite glamping recipes, featuring the prepped meals our family now eagerly anticipates and requests every year at our annual reunion campouts.
1. Campfire French Toast
When we’re craving a hearty breakfast, we whip up Dad's easy Campfire French Toast—it’s crispy on the outside, fluffy inside, and practically effortless. Dad's Pro Tip: To save your precious counter space, prep the custard mixture at home in a mason jar or Ziploc bag. It turns a messy cleanup into a simple "pour and cook" situation so you can spend less time scrubbing and more time with your family by the fire.

Campfire French toast pairs perfectly with savory breakfast meats like crispy bacon or sausage links to balance the sweetness.
Dad's recommended toppings include staples such as fresh berries, powdered sugar, maple syrup, nut butter, and whipped cream.
For a full meal, add scrambled eggs, fried eggs, or caramelized fruit.
2. Gourmet Burgers
Make-ahead Gourmet Burgers are our family’s favorite travel lunchtime or dinner meal. By prepping and freezing custom-seasoned patties at home, we trade kitchen stress for more sunset time. It’s the ultimate camping win: low mess, zero counter-space clutter, and a 'gourmet' feel that turns a simple campfire dinner into a special event—often accompanied by my father’s legendary storytelling.

Pairs best with elevated sides like parmesan-roasted tomatoes, truffle fries, sweet potato fries, or creamy coleslaw.
Complementary, sophisticated pairings include red wine (Pinot Noir, Malbec), craft beers, or gourmet milkshakes.
Simple, fresh options like grilled corn, zucchini chips, or a tangy cabbage salad also balance rich flavors.
3. Curry Mango Chicken Salad
Bored with the same old road-trip lunch? Dad’s Curried Mango Chicken Salad is the ultimate no-cook, no-fuss solution. By leveraging rotisserie chicken, this recipe is perfect for small spaces and quick prep. It’s a fantastic make-ahead meal, as it tastes even better after chilling in the fridge overnight.

Curry Mango Chicken Salad pairs best with buttery croissants, toasted artisan bread, or crisp lettuce wraps (butter/Romaine) for sandwiches.
For a lighter meal, serve over mixed greens, with crackers (like Wheat Thins), or alongside fruit.
Complementary sides include coconut rice, naan bread, or roasted cashews for crunch.
Also pairs well with Off-Dry Riesling (Dad’s Top Choice): A German Kabinett or Spätlese Riesling that has the necessary acidity to cut through the mayonnaise, while its subtle sweetness cools the curry heat and brings out the mango flavor.
4. Lobster Scampi
Elevate your RV dining with Dad's effortless make-ahead Lobster Scampi. Easy cleanup meets gourmet flavor with this pre-cooked lobster in a savory garlic-white wine butter sauce. Prep the pasta and sauce at home, reheat on the stove/grill, and finish with parsley and Parmesan.

Pairs best with light, bright, and starchy sides that complement the rich garlic-butter sauce, such as angel hair pasta, linguine, crusty Italian bread, or risotto.
Roasted asparagus, steamed broccoli, mixed green salads, and sautéed spinach provide a refreshing, healthy balance to the dish.
Also pairs well with Chardonnay
(Unoaked or Lightly Oaked) or
5. Texas State Fair Chili
Our ultimate camping tradition? Bringing the bold, authentic taste of a Texas State Fair Chili to the campsite. Inspired by my dad’s time in Texas, this rich, no-bean, beef-forward chili is the ultimate one-pot comfort food—tender chuck beef simmered in a savory spice blend. Even better, it’s a meal-prep dream that tastes better after freezing, making it the perfect stress-free highlight for long road trips.

Pairs best with crunchy, salty, or sweet accompaniments that balance its rich flavor.
Classic sides include cornbread, Fritos (Frito pie), saltine crackers, and surprising cinnamon rolls.
Also pairs best with crisp, malty beers like Shiner Bock, amber lagers, or dark Mexican beers such as Negra Modelo.
For wine, consider a fruit-forward Malbec, Syrah, or Zinfandel to balance the heat.
BONUS "Family Favorite" Recipe
As a bonus, we are sharing our ultimate family favorite dessert! While we love classic campfire s'mores, this creamy No-Bake Banana Pudding is our go-to for RV travel. It only requires a bowl, a whisk, and some fridge space, making it perfect for preparing ahead of time.

Best Beverages
Cocktails: Banana Pudding Martini (Bananas Foster Moonshine + Rumchata), Banana Daiquiri (with rum and banana pudding cream), or a Brandy Alexander.
Hot Drinks: Coffee or hot chocolate.
Other: Southern sweet tea, root beer, or cocktails with dark rum.
Flavor Pairings
To enhance the pudding itself, it pairs well with ingredients that add texture or contrast, such as peanut butter, coconut, chopped pecans, or a drizzle of chocolate.
In conclusion, these five recipes are more than just camp food; they are a tribute to my father’s belief that great food should be enjoyed anywhere, especially around a campfire. By prepping these favorites ahead of time, we've transformed our cramped RV kitchen into a gourmet, stress-free space, allowing us to focus on what matters most: enjoying the great outdoors and making memories together.
